Purple corn is the same botanically as conventional yellow corn, however an abundance of polyphenols called anthocyanin give rise to a deep purple colour. These compounds offer diverse nutritional benefits not available in our well known yellow variety.
WHY CHOOSE PURPLE CORN?
Antioxidant capability often refers to the ability to scavenge reactive oxygen radicals. It is thus believed that antioxidants can provide health protection to oxidative degradation/damage in biological systems and it has been shown that purple corn has equal to or up to 2x higher antioxidant levels than blueberries.
Purple corn phenolic compounds have been shown in numerous studies to have potent antioxidant, anti-inflammatory, antimutagenic, anticarcinogenic, and anti-angiogenesis properties. Purple corn has also been found to combat diseases, such as obesity, diabetes, hyperglycemia, hypertension, and cardiovascular diseases
Essential amino acids are amino acids that the body cannot manufacture itself they must be attained from our diet. It has been found that purple corn has 15-20% more of the eight essential amino acids than conventional yellow corn.

Unlike most tortilla chips that are made from imported masa flour, Against the Grain Farms tortilla chips are made from non-GMO corn grown on our farm, processed using a method of cooking that is thousands of years old, using the whole corn with lime then ground in a stone grinder, ensuring freshness of each batch of tortilla's. Locally grown and cold pressed non-GMO sunflower oil is used to give the tortilla chips their crispiness.
